Spice Kit Contains

  • Fennel Seed
    • Please note: Due to seasonal factors, our fennel seeds are not as green as previous crops. We have evaluated the flavour and we are confident that they will perform just as well in cooking.
      Used in many curries, satay sauces and Indian & Asian recipes.
      Other Common Names: Florence Fennel, Finnochio, Lucknow Fennel Seed. Botanical Name: (Foeniculum vulgare dulce)
      Description & Use: Native to Southern Europe and Asia Minor, it was a symbol of success and in ancient Greece was referred to as ‘marathon’ in reference to the famous battleground on which the Greeks gained victory over the Persians in 490BCE. Fennel seeds should be pale yellow to green and have a characteristic ‘anise’ flavour. Fennel, although stronger in flavour than coriander, is one of the amalgamating spices, having the ability to bring other flavours together, while imparting its delicious fresh ‘anise’ notes to Malaysian curries and satay sauces. Lucknow fennel is much greener in colour, sweeter in flavour, and generally used as an after dinner breath freshener or in sweet dishes.

  • Crusting Mix
    • A full-flavoured spice blend without the heat of chilli. Sprinkle on meats before cooking, and on oiled vegetables before roasting.
      Description & Use
      : Herbie’s Spices Crusting Mix has been specially developed for those cooks who want to add a deep, full-bodied taste to grilled, barbecued and roasted meats without too much hot spiciness. Place the meat in a clean plastic bag with enough Crusting Mix to coat it. No oil is needed as the moisture on the surface of the meat is sufficient to make the spice blend stick. After roasting, make a gravy with the pan juices, it is absolutely delectable!

  • Spice Dust
    • Description & Use: The perfect topping for cappuccino, hot chocolate, yoghurt, smoothies and desserts. Made with spices from the New World and the Old.
      With a good vanilla powder finally available to us, we’ve also been playing with a blend of treats from the New World … vanilla, chocolate, chilli … along with sugar, cassia, cinnamon, cardamom, ginger, nutmeg, rose petals, and organic strawberry powder. This sweet dust is perfect for sprinkling over those other New World discoveries dear to us all, coffee and hot chocolate.
      Keep a shaker of our sweet Spice Dust close by your home coffee machine – Montezuma would be jealous if he could see what he missed!   Not just for your hot drinks, you can use this delicious blend in any sweet cooking, even on porridge or mashed bananas.

  • 32 Degrees Spice Mix
    • The Hunter Valley and Central Coast lie at 32 degrees South, and this spice blend, tangy and tasty, acknowledges the vibrant attitude of the region.
      Description & Use
      : Rub onto fish, chicken, pork and red meats. Use approximately 1/4 teaspoon of spice mix on each side when dry marinating steak, chicken or fish. You may wish to increase this amount depending on the amount of chilli heat you prefer. For an easy, tasty dip to accompany biscuits or seafood, add up to 2 teaspoons of 32 degrees spice mix to 1 cup of sour cream. Also great with jacket potatoes and sauteed mushrooms. Sprinkle over cheese on toast for a flavour and chilli boost.

  • Star Anise Ground
    • The key ingredient in Chinese five spice powder, sprinkle into stir-fry vegetables.
      Other Common Names: Badian, Chinese Anise. Botanical Name: (Illicium verum)
      Description & Use: The dried, star-shaped fruit of this Oriental tree are called Star Anise because of their distinctive star shape. Not to be confused with Anise Seed, Star Anise has a similar anise taste however it is quite pungent, clovey and licorice-like. Star Anise is an essential component of Chinese Five Spice powder, and is used in many Oriental recipes, especially those made with duck. Star Anise also adds flavour to chocolate brownies, and stewed compotes of fruit when placed in whole during cooking.

  • Mulling Spices
    • A selection of whole spices for making mulled wine.
      Other Common Names: Gluwein Spices.
      Description & Use: For making mulled wine (Gluwein) by following these simple instructions:
      Add 3 tablespoons of mulling spices to 1 750ml bottle of red wine, with 1 cup brown sugar, 1 sliced orange, and 1 lime sliced. Simmer (do not boil) for 20 minutes. Strain & serve.

  • Lemon & Herb Pepper
    • A delicious blend of cracked pepper and natural lemon.

      Other Common Names: Lemon Pepper.
      Description & Use: Sprinkle over chicken and seafood before cooking or at the table. Delicious on avocado, tomato and salad sandwiches.

  • Mixed Spice
    • A traditional blend of spices to flavour cakes, biscuits, hot cross buns, Christmas baking and desserts.
      Description & Use
      : Mixed Spice is a blend of spices that is generally used in sweet dishes such as fruit cakes, shortbread biscuits, fruit pies and most sweet, baked items. May be used when a recipe calls for a Hot Cross Bun Spice, Pumpkin Pie Spice or Apple Pie Spice.
