  • Tandoori Spice Mix
    • To season all types of Tandoori cooking such as Chicken Tikka without any artificial colours.
      Other Common Names
      : Tikka Masala
      Description & Use: Herbie’s Spices Tandoori Spice Mix may be blended with yoghurt to marinate chicken, fish and lamb prior to cooking. It is also an excellent dry marinade for meats that are to be pan-fried, grilled, roasted or barbecued such as Chicken Tikka.

      Blended and packed in Australia from imported and local ingredients.

      Contains: Paprika, Cumin seed, Coriander seed, Turmeric, Ginger, Cinnamon quills, Fenugreek seed, Black Pepper, Chilli, green Cardamom, brown Cardamom, Caraway seed, Spearmint.

  • Sumac
    • A dark purple, Middle Eastern spice that compliments tomato & avocado.
      Other Common Names
      : Elm Leaved Sumac, Sicilian Sumac, Sumach, Summak, Sumak. Botanical Name: (Rhus coriaria).
      Description & Use: Do not attempt to identify and gather Sumac yourself, as there are many varieties of the Rhus family that are poisonous, and can create severe allergic reactions in some individuals. Sumac of culinary use comes from a tree that grows in the Middle East. Sumac spice is the flesh and skin of the berry that is harvested when crimson. The hard seed that remains after the flesh is rubbed off, looks like a coriander seed and has little flavour compared to the outer flesh, which gets its acidity from Malic Acid, the same as in green apples. Sumac has a delicious, fruity, lemon-like tanginess. Sprinkle over salads, particularly avocado and tomato, and use to season white meats during cooking. Sumac forms a tasty crust when coated onto lamb joints before cooking.

  • Nigella Seeds
    • Sometimes incorrectly called ‘black cumin seed’ and ‘onion seed’ nigella compliments carbohydrates.
      Other Common Names:
      Kolonji, Charnuska, Love-in-a-Mist, Black Onion Seed. This is also often incorrectly called black cumin seed. Botanical Name: (Nigella sativa).
      Description & Use: These small, very black seeds have no noticeable aroma and an agreeable, slightly sharp, almost metallic taste. They are seen on Turkish bread, and along with the other spices in Panch Phora, and compliment almost all carbohydrates. Herbie’s recipe for Seeded Savoury Biscuits (see Ajowan Seed) is easy to make and for those who like them a little spicier, simply add ½ a teaspoon of Cayenne Pepper to this recipe.

  • Pasilla Chilli Powder
    • Pasilla is a dried chilaca chilli with raisin-like aroma and licorice notes.
      Other Common Names
      : Aji, Red Pepper. Chilaca Chilli. Botanical Name: (Capsicum annuum).
      Description & Use: There are literally hundreds of different chillies, all of which descend from the original ones discovered by the Spanish when they found the Americas. Prior to this chillies were unknown to the rest of the world. The warming bite and delicious capsicum taste of chilli was warmly embraced by nearly every nation on earth, thus we find some form of capsicum or chilli in nearly every cuisine. Dried chillies have a very different flavour to fresh ones, as upon drying a caramelization of the sugars takes place which creates a delicious, robust taste not found in fresh chillies, in the same way a sun-dried tomato has a more complex flavour profile than a fresh one.
      Chilli Pasilla powder is made from dried chilaca chillies that have a herb-like aroma and licorice-like notes. Traditionally used along with ancho and pasilla chillies in making the famous ‘mole’ sauce.

  • Sage
    • Premium grade sage leaves grown in Australia.
      Other Common Names
      : Garden Sage, True Sage, Salvia. Botanical Name: (Salvia officianalis).
      Description & Use: Sage is a hardy-leaved perennial, which has a strong, distinct flavour that is reminiscent of Mixed Herbs. Sage is generally used with rich and fatty foods such as pork and goose, as the savoury astringency of sage creates an ideal balance to rich food. Use sparingly in casseroles and with other savoury herbs in bread stuffing's for poultry.
