Spice Kit Contains

Salt & Pepper Squid Blend

  • A delicious blend of prickly ash, spices and salt for traditional salt and pepper squid.
    Other Common Names: Prickly Ash Spice
    Description & Use: Add 2 teaspoons of spice blend per cup of flour when making salt & pepper squid.  Dip seafood into seasoned flour, then stir-fry in hot oil.
    Contains: sea salt, black pepper, Sichuan pepper (prickly ash), chilli

Balmain-Rozelle Spice

  • A unique blend of spices developed by Herbie for the Feast of Sydney.
    Description & Use: Originally developed for a bit of fun to celebrate the ‘Feast of Sydney’ a food experience promotion organised by Tourism New South Wales, Herbie’s Spices Balmain & Rozelle Spice is a testament to the depth of Australia’s broad food heritage. It contains Asian spice flavours along with Indian, European and of course our own Australian native Lemon Myrtle.
    This spice blend adds a delicious taste to chicken, fish and lamb when sprinkled on to the meat about 10 minutes before cooking, whether grilling, barbecuing or baking. Sprinkle a little into stir-fried vegetables while cooking and then add a little coconut milk.
    Contains: kaffir lime leaves, lemon myrtle, turmeric, salt, cumin, ginger, garlic, chilli, coriander seed, galangal, caraway, cayenne

          Blended and packed in Australia from imported and local ingredients.

Lemon Myrtle Leaf Ground

  • An ideal substitute for fresh lemon grass when used sparingly in stir-frys, and works well with seafood, chicken and in desserts.
    Other Common Names: Lemon Ironwood, Sweet Verbena Tree, Sand Verbena Myrtle, Tree Verbena. Botanical Name: (Backhousia citriodora)
    Description & Use: One of the most useful of the Australian native herbs and spices, Lemon Myrtle has a delicious lemongrass-like flavour, and aroma of lemon verbena. Lemon Myrtle has one of the highest and most pure sources of Citral, 90%+ compared to oranges 2-5%, lemons 6-9% and lemongrass 65-85%.
    Use in dishes such as stir-frys and Asian curries as a substitute for lemongrass and lemon when the acidity of lemons is not desired.
  • Add towards the end of cooking, so it is not cooked for more than 30 minutes, as any longer than this may reduce the delicate lemon notes. Lemon Myrtle is best used sparingly, about  1/2 teaspoon to 500g of meat, carbohydrates or vegetables. A delicious Lemon Myrtle Cream can be made, by simply adding 1/2 teaspoon of lemon myrtle powder to a 300mL carton of cream. Allow to infuse in the refrigerator for a few hours, before using on chocolate cake, compotes of fruit, and fruit salads.

Aussie Fish Seasoning

  • Delicious on seafood including tuna & salmon steaks.
    Description & Use: Herbie has made this unique spice blend from 100% Australian grown and Australian native herbs and spices seasoned with South Australian Sea Salt. The aroma and flavour conjures up memories of the Australian bush, and compliments a wide range of foods. Sprinkle it on any type of seafood before grilling, barbecuing or pan-frying.
    Contains: coriander seed, sea salt, lemon powder, wattle seed, lemon myrtle leaf, Australian grown peppercorns

Paella Spice Mix

  • A special blend of selected herbs & spices, including real saffron, for making a quick and delicious Paella.
    Description & Use: Use 1 teaspoon per 500ml of stock using your favourite Paella recipe, or make a Vegetable Paella Rice Salad to serve as part of a BBQ.
    Contains: sweet, mild and smoked paprikas, salt, onion, garlic, rosemary, black pepper, whole saffron stigmas

Green Dill Tips

  • Sometimes referred to as ‘dill weed’.
    Other Common Names: Green Leaves: Dill Weed, Garden Dill, Green Dill. Seeds: Dill Seed. Botanical Name: (Anethum graveolens)
    Description & Use: Dill is a delicate-looking annual herb with frond-like leaves which have an agreeable, refreshing, anise-like flavour. These filigree leaves are often seen garnishing seafood, especially smoked salmon. Dill flavours mayonnaise, tartare sauces and salad dressings. Dill seeds have a more robust flavour than the green tips, and are used in pickles and chutneys, with vegetable dishes and in the exotic Moroccan spice blend, Ras el Hanout.
