It’s a very rare person indeed who can resist the smell of freshly baked cakes and biscuits. A sweet tooth simply must be indulged occasionally, so revive the old custom of home-baked afternoon tea, and treat your friends and family to these delicious, wholesome treats.

Spice Kit Contains

  • Nutmeg Ground
    • A premium grade, dark-brown, aromatic, high oil content, unadulterated nutmeg.
      Other Common Names: Muskat, Muskatnuss. Botanical Name: (Myristica fragrans).
      Description & Use: Nutmeg and mace are contained within a yellow to light-brown fleshy fruit resembling a peach that grows on an evergreen tree. Nutmeg, regarded as a sweet spice, is used in sweet dishes, with fruit and in pastries. Compliments vegetables such as pumpkin, carrot and spinach. Mace however is more pungent and tends to be used in savoury dishes such as sauces for fish, in pickles and chutneys. When picked and cut open the blood red mace is removed and dried. The nutmeg with shell is dried until it rattles, the thin outer shell is then removed leaving the inner nutmeg. Whole mace is referred to as ‘blade’ mace. Whole nutmegs should be sound and unbroken with little or no evidence of worm activity. The volatile oil in nutmeg and mace contains small amounts of myristicin and elemicin, which are narcotic and poisonous when consumed in very large quantities, therefore they should be used in the quantities specified in recipes. It is common to want to substitute nutmeg for mace, however this is not recommended as the flavours are different.

  • Mixed Spice
    • A traditional blend of spices to flavour cakes, biscuits, hot cross buns, Christmas baking and desserts.
      Description & Use: Mixed Spice is a blend of spices that is generally used in sweet dishes such as fruit cakes, shortbread biscuits, fruit pies and most sweet, baked items. May be used when a recipe calls for a Hot Cross Bun Spice, Pumpkin Pie Spice or Apple Pie Spice.

  • Ginger
    • A very high quality, aromatic ginger powder with lots of flavour.
      Other Common Names: Cochin Ginger. Botanical Name: (Zingiber officinale).
      Description & Use: Ginger root is the rhizome of a tropical plant that is related to galangal and turmeric. Herbie’s Spices ginger powder is produced from rhizomes that have been harvested when young. Ginger gathered at this stage is less fibrous and has a sweeter taste than ginger that has been left in the ground long enough to become hot and coarse. Freeze-dried ginger powder retains the tang of freshly grated ginger, and is ideal for using in uncooked dipping sauces and quickly prepared stir-fry dishes, as a substitute for fresh ginger. Ginger slices are used in clear soups and marinades when the flavour is to be infused, and the pieces removed before serving.

  • Star Anise Ground
    • The key ingredient in Chinese five spice powder, sprinkle into stir-fry vegetables.
      Other Common Names: Badian, Chinese Anise. Botanical Name: (Illicium verum).
      Description & Use: The dried, star-shaped fruit of this Oriental tree are called Star Anise because of their distinctive star shape. Not to be confused with Anise Seed, Star Anise has a similar anise taste however it is quite pungent, clovey and licorice-like. Star Anise is an essential component of Chinese Five Spice powder, and is used in many Oriental recipes, especially those made with duck. Star Anise also adds flavour to chocolate brownies, and stewed compotes of fruit when placed in whole during cooking.

  • Fragrant Sweet Spice Blend
    • An exotic blend of sweet spices with fragrant rose petals, to flavour cakes and all sweet recipes.
      Other Common Names: Mixed Spice, Apple Pie Spice, Sweet Spices.
      Description & Use: This Sweet Mixed Spice is a blend of spices that are can be used in sweet dishes, such as fruit cakes, shortbread biscuits, fruit pies and baked items. Herbie’s grandchildren love Fragrant Sweet Spices in porridge, and when Herbie makes pancakes for them, he puts a couple of teaspoons in the pancake batter!
